This recipe is incredibly easy to make and bursting with nutrition. Quinoa is a good source of magnesium, protein, vitamins B12 and E, and fiber. It has a high protein-to-carbohydrate ratio when compared to other grain products and was even proposed by NASA as an ideal food for long space flights. Paired with grilled chicken, cucumber, feta, and fresh herbs, this fragrant salad will become your staple.
INGREDIENTS
- 2 cups cooked quinoa
- 1 (organic) chicken breast, grilled and thinly sliced
- 1/2 cup chopped cucumber
- Juice of 1 lemon
- 1/2 cup feta crumbles
- 2 tablespoons chopped fresh oregano
- 2 tablespoons chopped fresh mint
- 4 tablespoons extra virgin olive oil
- Salt and pepper to taste
INSTRUCTIONS
- In a bowl, combine all ingredients.
- Season to taste.
- Enjoy!
