Brunch Pizza

Pizza is not often thought of as a morning meal, but when it’s filled with breakfast essentials like bacon, eggs, and avocado, this fan favorite can be enjoyed anytime!

INGREDIENTS

  • 4 large sweet potatoes (or 6 medium ones)
  • 12 eggs
  • 1/2 cup coconut flour
  • 1/4 cup dried parsley
  • 1 lb bacon
  • 4 avocados, mashed
  • Salt and pepper

INSTRUCTIONS

  1. Preheat the oven to 350 degrees. Use a spiral cutter or vegetable peeler to spiralize the sweet potatoes. Place the strings in a colander and generously salt them to remove water. Allow the salted sweet potatoes to sit for 20 minutes. Then squeeze out as much water as possible with your hands. Don’t skip this step – the crust won’t get crispy.
  2. Once the potatoes are drained, mix in four eggs, coconut flour, and dried parsley. Use your hands to mix until the sweet potato noodles start to form a ball.
  3. Layer a baking sheet with parchment paper and spray with cooking spray.
  4. Press the sweet potato noodles into the crust shape of your choice.
  5. Bake for 20 minutes, until the edges start to brown. Carefully flip the crust (using a second baking sheet) and bake for 20 more minutes. Allow the crust to cool completely before trying to move it. It will become crispier as it cools.
  6. While the crust is baking, cook the bacon in a frying pan.
  7. Just before serving, mash the avocados and add salt and pepper.
  8. Prepare eggs however you prefer. It’s approximately one egg per person.
  9. Spread the avocado mash on your potato crust. Top with eggs and sprinkle with crumbled bacon.
  10. Use a pizza cutter to slice it up!
