Paleo Granola

Crunch, crunch, crunch! There’s only so much non-crunchy food you can eat before needing something to crunch on. So why not make this delicious granola? It’s so versatile – you can create it with any of your favorite superfoods. Mix your favorite nuts and seeds, add grains if you enjoy them (not Paleo), and bake. Store in an airtight container for about 1–2 weeks. Top with fresh berries and serve with milk of your choice.

INGREDIENTS

  • Large handfuls of nuts of choice (macadamias, almonds, pecans, walnuts, etc.)
  • 1 cup buckwheat groats
  • 1 cup coconut flakes
  • 1 cup shredded coconut
  • 1 cup seed selection (pepitas, sunflower seeds, etc.)
  • Pinch of sesame seeds
  • Large handful of mulberries or Inca berries
  • Coconut oil
  • Pinch of pink Himalayan salt
  • Honey or maple syrup (optional)
  • 1 cup oats (optional, not Paleo)

INSTRUCTIONS

  1. Line baking dish or tray with baking paper.
  2. Fill with all your favorite yummy ingredients.
  3. Use a wooden spoon to mix.
  4. Drizzle a generous amount of coconut oil
  5. Add sweetener of choice (If you like it sweet – I think its just perfect without it).
  6. Bake on medium temperature until golden brown.
