This recipe is something I developed after being inspired by so many other drool-worthy recipes. I love making healthy but “indulgent-looking” recipes, especially when they are nourishing and oh so flavorful! That’s one reason I got into health coaching in the first place – the idea that eating healthy doesn’t have to come at the price of losing taste. I strive to create recipes packed with flavor and a multitude of health benefits.
This recipe is made with all organic ingredients, simple to make the night before and assemble in the morning, full of protein and fiber which will keep you feeling full for longer, and loaded with omega-3 fatty acids which is great for your skin!
Strawberry Coconut Chia Seed Parfait with Whipped Cream
Ingredients:
Strawberry Coconut Chia Seed Pudding
1/2 cup coconut milk from can (use condensed coconut milk on top)
1/2 cup water
1/4 cup chia seeds
1/2 cup fresh strawberries
Coconut Whipped Cream
2/3 cup coconut milk from can (use condensed coconut milk on top)
5 tbsp. maple syrup
1 tsp. vanilla extract
Parfait
Purely Elizabeth blueberry hemp ancient grain granola (or granola of choice)
Freshly sliced strawberries
Lemon zest
Toasted coconut flakes
Directions:
Strawberry Coconut Chia Seed Pudding
- Blend coconut milk, water, and strawberries together until smooth.
- Mix chia seeds and strawberry coconut mixture.
- Place pudding mixture in fridge overnight.
Coconut Whipped Cream
- Place all the ingredients in a bowl, and mix together using a high-speed hand blender until the mixture becomes frothy (takes about 5-10 minutes of blending on high speed)
- Place whipped cream aside for assembly
Parfait
- In a jar, add a layer of granola on the bottom.
- Then add a layer of the strawberry coconut chia seed pudding.
- Next layer in fresh strawberry slices.
- Repeat steps 6-8 layering each ingredient until you’ve run out of pudding mixture.
- Place two generous dollops of coconut whipped cream on top of the parfait.
- Sprinkle toasted coconut flakes and lemon zest on top of the whipped cream
- Dig in and enjoy!
