RETOX is about simple recipes that are good for you, and are surprisingly easy and quick to make. No fake goodness here – just straight up nourishment, #RETOX style!
I came up with this recipe while looking at all of the ingredients in my kitchen. I decided to compile them together, which took about 5 minutes, and voila! Try this as a main course for lunch or dinner, maybe even breakfast (gasp!), a snack or side. The proteins, essential fats, and iron will keep you going throughout the day and feeling great inside and out.
1 cup cooked quinoa
2 handfuls baby spinach
- Put olive oil in pan on medium heat
- Add cubes of squash and cook until soft (alternatively, roast squash in oven)
- Add spinach and stir
- Once spinach is wilted, add quinoa
- When all is warm, serve with sliced avocado and top with cilantro (optional)
- Enjoy! It’s that easy with #RETOX.
