AvoSquash Sautee

RETOX is about simple recipes that are good for you, and are surprisingly easy and quick to make. No fake goodness here – just straight up nourishment, #RETOX style!

I came up with this recipe while looking at all of the ingredients in my kitchen. I decided to compile them together, which took about 5 minutes, and voila! Try this as a main course for lunch or dinner, maybe even breakfast (gasp!), a snack or side. The proteins, essential fats, and iron will keep you going throughout the day and feeling great inside and out.

AvoSquash Sautee

Ingredients:

1 cup cooked quinoa

1 avocado

2 handfuls baby spinach

1/2 squash

Cilantro (optional)

Directions:

  1. Put olive oil in pan on medium heat
  2. Add cubes of squash and cook until soft (alternatively, roast squash in oven)
  3. Add spinach and stir
  4. Once spinach is wilted, add quinoa
  5. When all is warm, serve with sliced avocado and top with cilantro (optional)
  6. Enjoy! It’s that easy with #RETOX.
