An easy-to-make fall classic highlighting the natural goodness of apples! Gluten-Free, Vegan, Egg-Free, Dairy-Free. The topping is also delicious with your favorite nut or seed added in! The recipe incorporates seasonal produce and flavors like apples, warming cinnamon and ginger to help us stay in balance as the seasons shift. I learned at IIN to appreciate and honor the shifting seasons and the importance of eating in accordance with your local environment.
Gluten Free Vegan Apple Crisp
Ingredients:
Filling
6 cups (6-8 medium) apples, cored & chopped
2-3 Tbsp coconut sugar
1 Tbsp tapioca starch/flour
1/2 tsp Ceylon cinnamon
1/4 tsp organic nutmeg
1/8 tsp organic cardamom
1/4 tsp organic dried ground ginger
pinch sea salt
1 Tbsp lemon juice
Topping
1/2 cup gluten-free oats
1/4 cup coconut flour
1/3 cup coconut sugar
1/4 cup shredded coconut
1/2 cup organic coconut oil
1/2 tsp Ceylon cinnamon
1/4 tsp sea salt
Directions:
- Preheat oven to 350F
- Place chopped, cored apples into a bowl with coconut sugar, spices, tapioca starch, lemon juice and sea salt. Mix to coat throughout.
- Spread apple mixture evenly in a 9×9 inch baking dish coated generously with coconut oil.
- Prepare topping by mixing oats, coconut flour, coconut sugar, cinnamon, salt, shredded coconut and melted coconut oil to dorm a crumbly mixture.
- Sprinkle topping over apples.
- Bake for 20-30 minutes until apples are tender and topping is lightly browned.
