Sippable Pumpkin Pie

By Jessi Andricks

I am lover of all things fall – the colors, the holidays, the festivities, and especially the flavors. Squash and pumpkin become staples in my diet as soon as September hits. I immediately want to start roasting squash and baking pies. Unfortunately, eating pumpkin pie every day isn’t the best thing for my health. Drinking it as a smoothie though, is a healthy and delicious alternative.

Sippable Pumpkin Pie

Ingredients:

1 cup pumpkin puree

1/2 cup Greek yogurt (plain, vanilla, or coconut)

3/4 cup vanilla, unsweetened almond milk

1 frozen banana

1-2 tsp maple syrup (if using sweetened almond milk, leave out)

1/2 tsp cinnamon*

1/8 tsp ginger*

1/8 tsp nutmeg*

sprinkle of cloves*

Directions:

  1. Add all ingredients to your blender and blend until smooth.
  2. If needed, add more liquid or scrape the sides and blend again.

*You can add more or less spices. The more you add, the grittier your smoothie may get.
